Preheat oven to 190c
Cut Cauliflower into Steaks. Lay them onto a lined baking tray. Season lightly with salt and pepper & drizzle over some oil from pickle jar. The oil is infused with all flavours of the chutney and will add a beautiful flavour.
Roast for 10-12 mins each side until golden, spoon on 1tbsp kasundi and roast for 5-8mins. Flip it over and spoon 1 more tbsp kasundi and roast for another 5-8 mins.
Serve topped with a drizzle of kasundi, some crumbled feta, dill & mint leaves & squeeze of lemon with a side salad.
